Domaine de Joy – Sauvignon Blanc

Mechanical harvesting by night mid-September. Destemming. Skin contact maceration at a cold temperature between 8 and 15 hours. Pressing. Sauvignon blanc ferments in tanks at 18°C.
Aging in tanks under fine lees for 4 months. Pomp over of the lees for a better extraction of the aromas. Filtration, adding carbon dioxide and bottling.
Grape varieties: 100% Sauvignon blanc
Tasting: Sauvignon blanc offers a nice golden pale colour. It has green lemon and white fruits smell with a nice spicy touch. On the palate, it is round, elegant and well balanced between fruity and acidity.
Companion: You can enjoy it as an aperitif, but will be perfect with a fish soup, smoked salmon, sushi, spicy food.
